    Chargrilled Artichoke with Herb Oil & Parmesan Foam

 Turn simple artichokes into a restaurant-worthy dish! This recipe pairs smoky, chargrilled artichokes with fragrant herb-infused oil and a light, airy Parmesan foam for an elegant starter.


Ingredients (4 servings)

  • 4 globe artichokes

  • 1 lemon

  • Olive oil, salt, pepper

  • 200 ml olive oil + rosemary, thyme, parsley, garlic (for herb oil)

  • 150 ml milk, 100 ml cream, 60 g Parmesan (for foam)


Directions

  1. Prep & cook artichokes: Trim, halve, remove choke, rub with lemon. Simmer 12–15 min until tender.

  2. Infuse oil: Gently heat olive oil with herbs and garlic, strain.

  3. Chargrill: Brush artichokes with oil, season, grill until charred.

  4. Make foam: Heat milk & cream, melt Parmesan, blend with soy lecithin or use a siphon to create foam.

  5. Serve: Drizzle herb oil over artichokes, top with Parmesan foam, garnish with herbs or lemon zest.
